S'more Please! {Tammy's Famous Grain-Free Moka Pot Cake with Marshmallow and Caramel Topping!}

Prep Notes

Preheat the oven to 350 degrees and grease your pan!

I like to use coconut oil to grease an 8 X 8 and then put in the fridge to set it up!

Make your Espresso, Coffee or Moka Pot! It is best to let it cool before you add that into your batter!
You will need 1/2 of a Cup to 3/4 Cup of Prepared Coffee. Espresso will give it a richer flavor. You can use whatever coffee you like.

This is an easy recipe to make substitutions. It is very forgiving.

45 minutes!

One 8 X 8 Sheet Cake!

Ingredients


Cake Batter!

1/2 Cup to 4 {Heaping} Tablespoons of Coconut Flour {We love Bob's Red Mill}

2 Tablespoons of Raw Cacao {I have substituted Carob}

1/2 Cup to 4 {Heaping} Tablespoons of Coconut Flour {We love Bob's Red Mill}

2 Tablespoons of Raw Cacao {I have substituted Carob}

1 teaspoon {Heaping} of Cinnamon

1 teaspoon of Baking Soda {We love Bob's Red Mill}

1/2 Cup of Coconut Palm Sugar {or less}

1/2 Cup of Enjoy Life Chocolate Chips {I actually just put what I had left from one bag, it might have been more}

1/4 Cup {Heaping} to 1/2 Cup of Greek Yogurt {I use Fage Total}

4 eggs {I use Eggland's Best Large or XLarge}

1-2 T of Molasses {I free poured it.  I was not picky.}

1/2 to 3/4 Cup of Espresso  *{Coffee or Moka Pot}.

*I added it in to moisten and not saturate the mixture. It depends on your coconut flour and what it absorbs. I add it in last! {You can substitute water}


Topping! {I add in when there is 30 minutes left.}

I slice up a few Gluten-Free Marshmallows

I slice up a few Caramels {I love "Lovely Candies"}

*It is best to slice the Caramels when they are cold!

*I add the more Enjoy Life Chocolate Chips after I take it out of the oven!


Directions

Preheat Your Oven To 350 Degrees!
 
1. I grease an 8X8 with coconut oil and let it sit in the fridge. 

2. I mix together my dry ingredients and then add in the moist ingredients!

3. I baked the cake at 350 for 45 minutes. * {I added topping at 30 Minutes!}

4. When there was 30 minutes left, I added the Sliced Marshmallows {I got the corn-free ones I Posted a few photos to show you what to look for.  You can also google "Corn-Free Marshmallows"

5. I also added the Sliced Caramels {We LOVE the Lovely Caramels} It is easiest to cut the caramels when they are cold! 

6. When the cake was done, I took it out and sprinkled more chips on top!  You do not have to do this; but I recommend it.


Notes

This Recipe Yields One 8 X 8 Sheet Cake!

You can figure out how that best serves you and your friends. Do you want "Too Much {Big}" or "Not Enough {Small}"?

ALTERNATE NOTE! You can really decide how sweet you want the cake. You can also substitute honey or a sweetener of your choice.
I have Free Poured a few tablespoons of honey instead of using coconut palm sugar. 


This is one of my basic cake recipes that I throw together when I want cake. I have used it with different toppings, different frosting and I have substituted Carob instead of Cacao.  I have used a variation of this to make a spice cake.  I have also used this recipe to make pancakes, and cupcakes.  You might see this recipe used in various ways.  It is super versatile!
